I finally visited Mimizuka's bar, which I had wanted to go to for a long time. I was impressed by Mimizuka's personality, which doesn't boast about being the best in the world. When you hear about an authentic bar with the world's best bartender, you feel like you have to enter with a stiff collar and a high threshold. But when I entered, I could hear laughter from every seat, and Mimizuka himself said, "It's an authentic snack bar" (laughs), and he greeted me with a smile, making me feel relaxed throughout my visit. And of course, the authentic bar aspect was also evident in Mimizuka and the staff's demeanor, their serious gaze as they shook the shaker, and the "Grand Marnier De La Passion" dessert cocktail, which won the world championship. Naturally, it was full, and regulars kept coming in, and Mimizuka kindly said, "Please wait a little while." His way of treating customers was impressive. It's recommended for first-timers who want to experience a wonderful night in Ginza. As you would expect from Ginza, there was a diverse mix of people, including couples, married couples, foreigners, people having after-work drinks, and salarymen in suits. I definitely want to visit again.
Located just a few minutes' walk from Ginza Station, this bar is tucked away in the basement of a building. I visited on a Friday night around 10 pm. It was a bit early for a bar, so when I arrived, there were only two other groups of customers. I was able to easily snag a seat at the counter, but it started to get crowded later on. If you plan to go around 11 pm, it's probably a good idea to call ahead and make a reservation. Both the owner and the young bartender were incredibly friendly and approachable, creating a welcoming atmosphere. There was no menu, so I opted for a fruit-based cocktail. They had watermelon, peach, plum, kiwi, and more that night. My companion and I decided to try two cocktails each, sampling all the available options. The plum cocktail was absolutely divine! It was a frozen cocktail blended with apple liqueur, and the plum and apple flavors complemented each other perfectly. It was truly exceptional. Of course, the other fruit cocktails were delicious as well. The cocktails were priced around ¥3,000-4,000 each. It's a very comfortable and inviting bar, and I definitely plan to return.
I thought this Ginza bar would be a friendly, homey place with a lively staff, but… it's actually run by a master who created the world's best cocktail in the past IBA competition! I described my cocktail preferences vaguely, mentioning a Martini, No. 2, a short fruit cocktail, and other general ideas, but they were able to create delicious cocktails that perfectly matched my taste. I don't usually like sweet drinks, but I decided to try the world-famous Shining Bloom as a nightcap. It definitely had a rich, creamy texture like crème brûlée, but it wasn't overly sweet and was a truly enjoyable drink. The bill came out a bit high since I had a few too many, but it was a very bright, delicious, and enjoyable evening overall!
I'd been curious about this bar for a while and finally visited a few times recently. It was simply the best. I feel like the owner, Mr. Mimizuka, embodies everything about this place. He was kind and welcoming to a newcomer like me, but also gave me the space I needed, making me feel truly comfortable. My female companion seemed to enjoy it as well. The deliciousness and fun of the cocktails are beyond words for someone like me.
I always appreciate your service! This is my favorite bar. Ear塚-san is the best.
