A rare find in Tokyo, this authentic Hakata tonkotsu ramen is a must-try! The rich broth perfectly coats the thin noodles, creating a truly delicious experience. The chashu pork is also excellent, so I highly recommend ordering extra chashu with rice for the ultimate meal ✨. If you're from Kyushu, this will definitely bring back memories of home 🎶. I'll definitely be back for more!

I had been wanting to try this place for a while, and finally got the chance when I was working nearby. 😅 The taste was exactly what I expected from a tonkotsu ramen. The ramen was ¥800... I wonder if the ¥180 price for a second helping is a bit outdated... The chashu don was delicious with the chashu being grilled, but it was ¥380... The atmosphere was quiet at the counter, but the tables were filled with people who had been drinking and were incredibly loud. Maybe it's a lively, street-stall kind of vibe? Personally, I would have preferred it to be a bit quieter and a bit cheaper. It's one of those places I thought about after leaving. They accepted payments like d払い and PayPay. I understand the burden it puts on the restaurant, but I personally appreciate being able to pay with something other than cash. The takana on the table was very flavorful with a good amount of spice and not too much moisture. It was really delicious.

Today, I'd like to introduce "Yamachan Ginza", a Hakata ramen shop located in Higashi-Ginza, Tokyo. This shop's main branch is in Tenjin, Fukuoka, and their specialty is the famous Hakata ramen, which needs no explanation. They also have a branch in Nakasu, which was selected as one of the "100 Best Izakayas" in Japan by Tabelog in 2021. In Tokyo, ramen shops and izakayas are usually considered separately, but this is something unique to Fukuoka, where the street food culture is strong. Of course, I went with the classic "bari-kata" (extra firm)! The soup is light but still has a rich pork bone flavor. There are two slices of tender pork belly chashu. I finished it all so quickly! I wanted to order a kaedama (extra noodles), but I couldn't eat a full portion, so I asked for a half portion, which is not on the menu. They were kind enough to offer it for ¥100 instead of the usual ¥180. Finally, I finished it off with some pickled ginger and takana (mustard greens) for a flavor change. ☺️ I definitely want to try Hakata ramen in its birthplace sometime! Thank you for the meal!

This time, I ordered the "Nagasaki Ramen." Although I could sense the unique aroma of pork bone broth from outside the shop, it wasn't as strong inside, and I wouldn't even say it was smelly. In fact, it was almost odorless. The ramen came with a large piece of char siu (roasted pork), and the broth was rich with pork bone flavor, making it incredibly delicious! I ordered the noodles firm, but even regular would have been quite firm. The table was equipped with pickled ginger, mustard greens, and other flavor-enhancing items, which is a big plus. During lunch hours, you can get a free rice or a second serving of noodles, making it a great deal! A ramen shop in Ginza. It's located within a 5-minute walk from Higashi-Ginza Station. It's a tonkotsu ramen shop with roots in the Hakata street food stalls. I went there around 12:00 pm and there was a 4-person wait. The interior had a street food stall vibe, or maybe a Chinese restaurant feel, which was quite different from the atmosphere of Ginza. I was seated after waiting for about 5 minutes. Today, I had the following: ✔︎ Hakata Mori (¥1200) The ramen arrived in just 2 minutes. As expected, Hakata ramen is fast. The toppings included green onions, seaweed, wood ear mushrooms, soft-boiled egg, chashu pork, and cod roe. The generous amount of wood ear mushrooms and green onions was a nice touch. The broth had a good amount of richness without being too smelly. The noodles were the classic thin, straight, firm style. The cod roe was quite spicy, and it completely changed the flavor of the soup when mixed in. It's best to enjoy the traditional tonkotsu broth first, then gradually mix in the cod roe to enjoy the flavor transformation of the cod roe tonkotsu. It's nice to have a street food-style ramen shop in Ginza. It has a fast turnover and is a good option for a quick meal, especially when there's no line. Thank you for the meal!!
