They operate a pop-up shop in Kiyosumi Shirakawa. In February, due to the pandemic, they are only selling by reservation. They make their bagels with domestic wheat, sweet sake, honey, and yeast. If there are any cancellations on the day, you might be able to purchase one. The dough itself is described as soft, but it has a high density and a chewy texture. It might be difficult to eat if you have braces. It also takes some effort to tear it by hand, so it's recommended for those who like hard bagels. Anko Butter Sandwich The anko (sweet bean paste) and butter are both delicious. The bagel is a salty plain bagel. Each element is delicious, so of course, the combination is delicious. Sakura Terrine This one has a dense texture, but the flavor was subtle. It was a bit bland. Coffee Tiramisu Sandwich This is a coffee bagel base with mascarpone cream and brownie. The mascarpone cream is quite sour, and the balance with the other ingredients is... off. The brownie has chunks of walnuts, but I think it would be better eaten on its own. The balance is not quite right. There's no picture, but I also had the Sour Cream Onion Bagel. What is sour cream? Onion? There's a bit of bacon in it. Filled bagels are 400 yen, and sandwiches are 450 yen, which is a bit pricey. For this kind of filling balance, I feel like the price is not worth it. The dough is delicious, so I hope they add more plain types. Additional Note Matcha Terrine It's recommended to eat this right after purchase. If you freeze it, thaw it, and then bake it, the terrine inside becomes disappointing... It was a delicious bagel with a strong matcha bitterness. Strawberry Cream Almond This is the best bagel so far. They use a generous amount of strawberries. The balance of strawberry sweetness and cream cheese was perfect. This was so good, I want to get it again. Camembert Rum Honey There's a big chunk of Camembert on top, and you can enjoy the nice aroma of rum. If you steam it and then bake it, the Camembert becomes hot and melts, combining with the crispy dough, giving you a pizza-like experience. However, the filling is only on top, so you end up eating a plain bagel towards the end, and the balance is not quite right.
I ordered a freshly baked salted caramel peanut bagel. It was chewy and delicious. The shop was simple, stylish, and lovely. I want to try the an-butter next time. I thought it was a new shop, but it seems they are opening a shop on a regular basis using a space called "conata." I checked the opening dates on Instagram and made a reservation to purchase. Today, another shop was open. It was a Singaporean confectionery and it was delicious.

I went there after seeing a post on Instagram about their pumpkin bagel sandwich! ❣️ Kiyosumi Shirakawa is far, so I hesitated, but it's great that they offer pre-orders. I probably wouldn't have gone if I couldn't pre-order. 🤣 I bought: ✅ Pumpkin Rum Raisin Cream (¥350) ✅ Lemon Cream Almond (¥350) They're small, so the price is a bit high. The dough is made with domestic wheat, honey, and sweet sake, so it's slightly sweet. It's a chewy, moist type with less elasticity, making it easy for older people to eat. It's recommended for those who like soft bagels. Personally, I found the texture a bit too crumbly and lacked the dense chewiness. 🤣 The pumpkin cream and whipped cream are on the lighter side. The rum raisins mixed into the dough are also sparse. The pumpkin cream is probably a mix of pumpkin and whipped cream. It was smooth and delicious. They sell their bagels regularly, so check their Instagram for updates. I absolutely love bagels, and the bagels at Sub Bagel are amazing! The dough is so chewy and delicious. The mandarin cream sandwich is also great, with a cream that's not too sweet and a perfect balance of mandarin acidity. I also recommend the ochazuke bagel, which has salmon and salted kelp inside the dough. It's perfect for those who don't like sweet things!
The chewy bagels are delicious 😊. There are so many varieties, it makes you want to try everything. They seem to be open once a week now, but I definitely want to go when my day off lines up with their open day 😆.
