I had the black soy sauce ramen. It was delicious, with a light soy sauce base and a strong bonito flavor. It came with char siu pork, duck, and a soft-boiled egg, so I was satisfied even without any extra toppings. Looking at Instagram, I saw a lot of photos of the white ramen, so maybe that's the shop's specialty 🤔 It's a chicken white broth with bacon chips, a different flavor that reminds me of carbonara. (I had a bite.)
I ordered the "Nihon-ichi Shoyu Soba" (Japan's Best Soy Sauce Ramen). The soup had a strong, assertive soy sauce flavor with a rich dashi base. The noodles were thin. The toppings included pork and duck chashu, a soft-boiled egg, and vegetables like mitsuba (Japanese parsley) and mizuna. The portion size was large and satisfying. While the dashi flavor was strong, the soy sauce was so dominant that it felt a bit one-dimensional. The pork chashu, despite not appearing to be sous vide, was surprisingly tender and delicious. The soft-boiled egg was good, but nothing extraordinary considering how many places are focusing on them these days.
I ordered the limited-time cold black ramen and keema rice. The thin noodles, flavorful broth, and refreshing taste reminded me of a stylish, upscale version of somen (my vocabulary is lacking!). It was delicious. The restaurant had a nice atmosphere, perfect for a relaxing meal.
This is a stylish ramen shop. I visited before noon on a weekday and there was no wait. I had the "White of the Extreme," a white broth ramen with all the toppings, for 1390 yen. It was definitely a Western-style ramen as described on the menu, with a poached egg, fried garlic, and asparagus wrapped in meat, among other things. It was definitely well-crafted and delicious, but it wasn't quite what my palate was craving that day. So, I'll try the soy sauce ramen next time. The noodles were a regular portion but thin and quite filling. Also, the pork and miso rice bowl looked delicious.
I had the "Shiro" (White) ramen. Just like the main branch, it was a bowl that felt meticulously crafted. 🍜 The chicken paitan soup was simply delicious. 🥹 The creamy, almost Western-style flavor might be due to the addition of cream? The noodles were thin and had a good bite, playing a supporting role to the star of the show, the soup. The poached egg was interesting. Eating just the egg white with the soup before mixing in the yolk was another delicious experience.✌️ The meat-wrapped asparagus also went well with the soup! The black pepper sprinkled on top added another layer of flavor. The only downside was that it was a bit difficult to bite through. 💦 The fried onions and bacon also held their own alongside the soup. While it seemed like a Western-style dish, the seaweed added a touch of Japanese flavor, which was another interesting element. It went well with the soup. 👏
