The store is bright and beautiful. You buy a ticket and then take a seat, but the vending machine is in the left corner, which can be confusing for first-timers. I had the special, available only on Saturdays, Sundays, and holidays, in a regular size, with all the toppings as normal. The noodles and the unpretentious soup were a perfect match, and the melt-in-your-mouth char siu was amazing. The scallions and seaweed were also a perfect touch. The soup was so delicious that I dipped rice in it and ate it as a porridge. And the pickled radish on the rice was absolutely delicious. I finished everything and was completely satisfied with my meal.
The restaurant is located about a 4-minute walk from Exit C4. It's a Kyoto-style backfat chicken bone soy sauce ramen shop with two locations in the Nihonbashi area. I visited around 9 pm on a weekday and was able to enter without waiting. The turnover seemed to be fast. The clean, white wood interior was filled with business people coming in alone after work. ◆ Half-boiled Egg Ramen I ordered the noodles firm, less fat, regular spice, and half a serving of rice. The thin noodles were easy to slurp. The three-layered soup was delicious from the first sip and changed flavors with each bite. The top layer was mild, the middle layer was refreshing, and the bottom layer was spicy. Scooping from the bottom allows you to enjoy the special chili pepper's spiciness. The green onions themselves were also delicious. The changing soup, thin noodles, and nine-leaf green onions combined to create a satisfying bowl that wasn't heavy. It went well with rice too. It was delicious, thank you for the meal.
On my way back from renewing my driver's license at the Koto Testing Center by bicycle, I stopped by around 3 pm to grab some lunch since I hadn't eaten yet. I ordered the ramen with a soft-boiled egg for ¥1,050, with firm noodles, regular oil, and regular spice. The soup, while initially appearing oily, was actually a refreshing soy sauce-based broth that balanced perfectly with the generous amount of scallions. It was delicious and went well with the thin noodles. Thank you for the meal.
I visited around 6:30 PM on a weekday in mid-July of 2024. The restaurant was about 80% full, but I was able to get a seat right away. I ordered the Kujo Negi Ramen with extraネギ (green onions) as a topping. The ramen arrived in about 5 minutes, with a mountain ofネギ. Theネギ was crunchy and made a satisfying sound when I bit into it, with almost no spiciness. It was a great texture. They provide a slotted spoon so you can eat all of theネギ. The soup had a lot of back fat, but it wasn't greasy. The noodles had a texture similar to Hakata-style tonkotsu ramen. Theネギ was so prominent that it felt like I was there to eatネギ more than the noodles. It was delicious. Thank you for the meal.
This ramen shop is open early, so I often visit. You buy a ticket and then join the line. Even at 11 am, there's a queue. You tell them your preference for firmness, back fat, and spiciness when you order, and they also ask how much rice you want (it's free). Today, I'm having the Kujo Negi Ramen. The broth is light but flavorful, and the thin, straight noodles are a bit long, making them enjoyable to slurp. They have ramen sauce, so you can adjust the flavor to your liking. I ate some rice and pickles in between, and finished it all quickly. I think this is a ramen that everyone would enjoy.
