Ginza Sushi Ishiyama It was a long-awaited lunch meeting with business colleagues. It's been 5 months since I last had sushi in Ginza! Ishiyama is a Tabelog Sushi 100 Top Restaurant. Their 14-piece lunch course is 13,200 yen. The chef is young, but his movements are beautiful and his service is meticulous. The waiter was quick to ask if I wanted another drink even when I had a little left (laughs). I ended up having 5 refills. The ingredients were meticulously prepared and full of unique touches, leaving me completely satisfied. The mackerel sushi roll and the conger eel were exceptional and I ordered seconds. Delicious, delicious 😋. As expected, there were still many inbound tourists. (≧∀≦) We added two pieces each and had four drinks each, totaling 45,300 yen.

Sushi in Ginza🍣 Ginza is a district teeming with delicious restaurants, regardless of genre. Sushi is no exception. I visited Ishiyama for the first time, and the atmosphere and sushi were both exceptional. You can enjoy a luxurious experience. There are also female sushi chefs, and I am quietly cheering for their future success.

I visited this restaurant with my girlfriend for our anniversary. We've been to many sushi restaurants where we paid around ¥20,000 per person, and I thought that at this price point, it wouldn't be much different. So, I avoided sushi places that cost around ¥30,000. But, since it was our anniversary, we decided to give it a try. To put it simply, it was a completely different experience. I was blown away. Even when I eat high-end sushi, I usually think, 'It's good, but it's expected.' But here, I truly felt the deliciousness. The chef's work was meticulous, and his attentiveness was impeccable. This is definitely a place I want to visit again. We didn't order any alcohol, but the total bill was around ¥70,000. It's not a place you can easily go to, but I will definitely be back.

Opened in 2018, it's a relatively new establishment. The chef, Mr. Ishiyama, honed his skills at "Sushi Kanesaka" and "Sushi Saitou" and served as the head chef at "Ginza Sushiya" before opening his own restaurant. I made a reservation by phone after hearing good things from a friend. It's a popular place, but reservations are relatively easy to get, which was a relief. The lunch course comes in two options: a 15-piece course for ¥10,000 and an 18-piece course with a negitoro roll for ¥15,000. ◆Lunch Course (¥15,000) - True Sole - Gizzard Shad - Aori Squid - Medium Fatty Tuna - Fatty Tuna - Marinated Lean Tuna - Kuruma Shrimp - Kisu (Silver Whiting) with Kombu - Mehikari (Deep-Sea Fish) with Scorched Scallions - Horse Mackerel - Hokkigai (Surf Clam) - Bonito - Battera (Vinegared Mackerel) - Sea Urchin - Steamed Hamaguri (Clams) with Sudachi Zest - Grilled Anago (Conger Eel) - Steamed Anago (Conger Eel) - Soup - Negitoro Roll - Kanpyo Roll - Tamago (Egg) The rice is a blend of red vinegar and rice vinegar, resulting in a mild balance with a noticeable vinegar flavor. The rice had a good firmness, complementing the ingredients. The pieces were relatively small, but by the end of the meal, I was quite full. The chef worked silently and efficiently, serving the sushi at a good pace. ☆Highlights☆ - Steamed Hamaguri: This was my first time trying Hamaguri with sudachi zest. The combination was fragrant and delicious. - Kisu with Kombu: The Kisu was moist and had a nice springiness, with the kombu flavor permeating through. This was my favorite dish, paired with the delicate flavor of the rice. - Kanpyo Roll: The kanpyo was cooked to a sweet and moist consistency, with a good texture. It was like a dessert. - Tamago: The beautiful color, the fluffy, melt-in-your-mouth texture that could be picked up with chopsticks, and the perfect sweetness made it taste like a custard. The restaurant has high ceilings and ample personal space, making it very comfortable. I could have stayed there forever (laughs).
