Chuka Soba Biriken in Asakusa Salt Chuka Soba with all the fixings (thin noodles) ¥1500, bottled beer (medium) ¥600 The golden soup, rich with chicken oil, is a deep and sharp flavor, combining the umami of chicken and duck with a crisp salt tare. The thin, straight noodles made with whole wheat flour are cooked to a supple texture and have a nice flavor. The thick-cut braised pork is tender and falls apart easily. The duck char siu, served with truffle paste, is well-seasoned and delicious!!
I visited on May 23, 2024, a little after 11 am. It was already full, so I bought a ticket for the recommended 'Shoyu Zenbu-nose' (Soy Sauce with Everything) inside the shop and waited on the bench outside as the first in line. After about 10 minutes, I was guided to a counter seat inside and waited a bit longer. I could see the preparation process from the counter, and the noodles were being kneaded by hand with great care. About 10 minutes later, the ramen arrived. The toppings were beautifully arranged. Time to eat! The clear soup was light but flavorful, and I felt it paired well with the noodles. It's a high point that the noodles are made with whole wheat flour, even though it's ramen. A must-try for whole wheat flour lovers. The duck-like char siu, which had a light flavor, and the pan-fried pork char siu were both quite delicious. The sweet soft-boiled egg was also my favorite type. Towards the end, yuzu (citrus) hidden at the bottom of the soup emerged, whether by design or by chance, adding a nice flavor change. Overall, I felt it was a high-level ramen. Thank you for the meal.
I was captivated by the depth of flavor in their hand-kneaded ramen. After a night out with friends, I decided to visit "Chuka Soba Biriken" for some ramen. This time, I opted for the "All-in Hand-Kneaded Ramen." I arrived at the shop around 9 pm. I selected the "All-in Hand-Kneaded Ramen" from the vending machine and waited about 10 minutes. The ramen that was served was even more beautiful than I had expected. The clarity of the broth, the meticulously arranged char siu, the truffle paste, and the glossy hand-kneaded noodles were all impressive. First, I took a sip of the broth. The soy sauce-based broth had a strong duck flavor, and while it was light on the palate, it had a deep richness. The aroma of truffle infused in the broth was elegant and pleasant. Next, I tried the noodles. The hand-kneaded, thick, curly noodles had a chewy texture that was delightful and paired perfectly with the broth. The shape of the noodles, which allowed the broth to cling to them, enhanced the flavor with every bite. Two types of char siu were served, allowing you to enjoy the distinct flavors of duck and pork. The duck char siu was particularly exquisite, tender and juicy, yet not greasy, and the truffle paste further enhanced its deliciousness. The pork char siu was equally impressive, with its perfect balance of fat and a flavorful marinade that stimulated the appetite. Each topping was meticulously prepared, and the soft-boiled egg, in particular, was a masterpiece, with its rich yolk that complemented the broth perfectly. The hand-kneaded ramen was simple yet packed with deep flavors. It was a truly satisfying experience.
The ramen shop has a trendy vibe with a clear, translucent broth and duck meat. As expected from its appearance, the soy sauce flavor is clean and refreshing, making it a perfect choice for a gentle lunch after a night out. While the shop promotes its thick, hand-kneaded noodles, I personally recommend the standard thin noodles. Dipping the thin noodles into a spoonful of broth with pepper and vinegar is absolutely delicious. I highly recommend trying it at least once.
