Shin-kan 1F Business Hours: 10:30 AM - 8:00 PM Closed: None Budget: ~¥1000 ———————————————————— This time, I went to "365 Days and Nihonbashi", a popular bakery from Yoyogi-Hachiman, located on the 1st floor of the new building of Nihonbashi Takashimaya S.C., just a 1-minute walk from Nihonbashi Station! They bake bread using carefully selected ingredients from all over Japan, including domestic wheat, vegetables, and fruits, with a focus on cherishing daily meals. The numerous breads lined up in the display case were mostly small and cute, making me excited. While many of the shapes might be unfamiliar, they are considered the new Japanese breads of the future, with meaning behind their forms and methods of production. What makes "365 Days" bread so special is that Chef Sugikubo has re-examined every process and renovated (rebuilt) bread making to create bread that "allows you to enjoy the taste and aroma of the ingredients, starting with the flour." His dedication to bread is truly admirable. For example, in many bakeries, it's common practice to use fresh yeast for fermentation to improve rising, but fresh yeast has a very strong yeast smell, which can sometimes overshadow the natural flavor of the wheat. Chef Sugikubo uses instant dry yeast, which has the weakest smell among yeasts, to directly convey the flavor of the ingredients, starting with the flour. Also, the water content in the dough is typically around 60% to 70% for every 100 grams of flour in regular bread. However, "365 Days x Baguette" uses 92%, "365 Days x Shokupan" uses about 80%, and "Hokkaido x Shokupan" uses about 90% water. Due to the high water content, gluten formation is difficult, resulting in a bread that is easy to eat with a crisp texture. What's the origin of the name "365 Days"...? It seems to convey the message, "Let's eat food that is good for both our bodies and minds every day." Under the store name plate, there is a mathematical formula: "Food + Food - Food x Food ÷ Food." When I looked it up, it seems to convey the message of combining ingredients to make new discoveries, subtracting to bring out the umami of the ingredients, and sharing the resulting synergy. I completely agree! The bread was displayed in a showcase, and I chose what I wanted and told the staff the name of the item to have them get it for me. It was a face-to-face system. Menu I ordered this time: 【Chocolat Croquant】 The appearance with its little bits is impactful and cute ♡ It's the signature menu of 365 Days. I enjoyed the bitter ganache and the crunchy puff texture! 【Cinnamon Roll】 It's a cute, small size ♡ The dough was chewy and springy, and the sweetness of the cinnamon was irresistible! 【Cacao】 The surface is covered with cookie dough, which is crunchy, and the inside has ganache, making it a bitter chocolate cream bread. 【Tomato and Olive】 The chewy dough has salty tomato and olive inside, which was absolutely delicious. The store has an eat-in space where you can enjoy food menu items exclusive to Nihonbashi Takashimaya S.C., such as 【Meat Vegetable】 and 【Salad Bowl】, which you can choose either rice or pasta, or 【Avocado Salmon x Dinkels Wheat Open Sandwich】 and 【Acai Fruit Bowl】 using their pride and joy, bread. I went to 365 Days and Nihonbashi! This bakery has its main store in Yoyogi. I bought some bread because I went to Nihonbashi Takashimaya. Their popular item is the Croquant Chocolat, priced at 422 yen. It's a combination of chocolate ganache and crispy chocolate. It looks delicious! Unfortunately, they didn't have any Kouign Amann, so I got the Honey Toast for 411 yen. It's packed with honey, crispy on the outside, and chewy on the inside. The staff recommended the 100% Sonbré Sun for 346 yen. It's made with domestic wheat flour called Kitano Akari. My daughter loves its chewy texture, so we chose this one. The staff even put a cooling pack on the Croquant Chocolat! First, I tried the Honey Toast. Maybe because it had been a while, or maybe it was damp, but the crust was hard! Ouch, my teeth! The inside was definitely chewy, sweet, and delicious. The Sonbré Sun was chewy, but... hmm. I don't know much about the depth of bread. Croquant Chocolat. My daughter took a bite first. Wow! Oh! It's so different! she said. I took a bite too. Oh! It's a texture you wouldn't expect from bread. ❤️ The chocolate is like caviar, with a crispy texture. It's delicious! I want to put this chocolate in cocoa! But, because the pieces are small, you have to be careful not to drop them. 💦 A few pieces fell. You should eat it over a plate.

Just a short walk from Nihonbashi Station, I visited "365 Days and Nihonbashi," a bakery that has been recognized as one of the "100 Best Bakeries in Japan." The shop is located inside Takashimaya, right by the entrance. It's perfect for both takeout and enjoying a quick coffee break. There are about eight seats at the counter. I ordered the following: * Gorgonzola Gruyere (¥528) * Japanese Black Tea (¥440) The Gorgonzola Gruyere had a wonderful aroma, as it was made with a blend of Gorgonzola cheese. The surface of the bread was also covered in cheese, making it a dream come true for cheese lovers. The bread itself was crispy and fragrant, with occasional crunchy walnuts adding a delightful texture. The bakery offers a wide variety of breads, and I'm definitely planning to visit again. This bakery is located inside the Nihonbashi Takashimaya department store. I visited on a weekday afternoon, and it was surprisingly empty. I was tempted to eat in, but I had another appointment, so I opted for takeout instead. ◆ Croquant Chocolat ¥422 This small bread is filled with crunchy chocolate bits. It has a slightly bitter flavor that isn't too sweet, and it was delicious. However, considering the price for just one piece of bread, it felt quite expensive. There were many other types of bread on display, and the staff even told me, "This one is freshly baked!" I'd love to try some of the other breads next time I'm in the area.

I arrived around 4 pm on a Friday in July 2024, and there was only one other customer in the store. ・Croque Monsieur This is a bread baked with homemade ham, béchamel sauce, and Gruyère cheese on top. The croque monsieur has a soft texture and a powerful, rich cheese flavor that is impressive. The aroma that spreads when you bite into it is fantastic. The cheese is thickly layered, so it's very satisfying and perfect for when you're hungry and want something hearty. It was absolutely delicious! ・Ham and Cheese This is a bread baked with homemade ham, béchamel sauce, and Gruyère cheese sandwiched between croissant dough. The ingredients are the same as the croque monsieur, but the combination and the type of bread used are different, so it feels quite different. The ham and cheese has a crispy texture and buttery aroma characteristic of croissant dough. The sweetness of the croissant dough and the savory flavor of the ham are a perfect combination. It wasn't a very heavy bread, so I thought it would be perfect for a light meal! The shop is located just a short walk from the B1 exit of Nihonbashi Station on the Tokyo Metro Ginza Line. It's located on the first floor of the Nihonbashi Takashimaya S.C. Shin-kan building. The shop is filled with the delicious aroma of bread, creating a happy atmosphere. The sight of the various breads lined up is also spectacular. There are a total of 10 seats, with a counter facing the outside of the store and a counter facing the inside of the store. The customer base seemed to be mostly women, with an age range of around 30 to 50 years old. There weren't many people using the store at that time, and most people were taking their orders to go. Despite its convenient location, it felt like a hidden gem where it was easy to use the store, so I'd like to visit again to work or just relax. It was delicious, thank you for the meal! (*´◒`*)
