Japanese Evolved Miso Ramen This is a super popular shop. First, the taste is almost perfect. The pricing is also just right. I agree. And, it's not pretentious. You can feel the concept of wanting people to eat a truly delicious ramen until they're full. There are no unnecessary, unwanted quirks, just a good quality shop. The interior is just a counter, it's cramped and not very comfortable. The staff's service is average. There's a line during lunchtime, but the turnover is pretty fast, so don't hesitate to join the queue. The value for money is high, and you can enjoy a well-balanced, top-level miso ramen.

I visited during lunchtime on a weekday, arriving a little after 1 p.m. It was crowded and I had to wait a bit to get in. Even though it was past peak hours, it seems to be very popular. The main dish is miso ramen, but they also offer spicy miso ramen and tsukemen. This time, I ordered the basic miso ramen. You purchase a ticket from the vending machine on the left side of the entrance and hand it to the staff. They will ask if you want to add extra vegetables and garlic. It's kind of like a二郎 (Jiro) style. Also, on weekdays, they offer a small bowl of rice, so you can choose whether you want that or not. I went with extra vegetables and rice. The miso ramen broth is a rich, thick type with a strong miso flavor. However, it lacked a bit of depth and punch. It's easy to eat, but it gets a bit monotonous towards the end. The noodles are medium-thick, a common type for miso ramen. I ordered extra vegetables, so there was a generous amount of them, making it a very satisfying meal. The chashu was melt-in-your-mouth tender and delicious. There were also some menma (fermented bamboo shoots), which added a nice touch. The small rice, while a weekday service, was a very small portion. Overall, it was a well-balanced and well-made dish. It's quite filling, and adding extra vegetables makes it even more substantial. I was very satisfied with the meal.

I visited this place based on the positive reviews, but I felt it didn't live up to the hype. The miso ramen with extra vegetables and garlic is a great offer. However, I think the ramen could be even better with more careful noodle cooking and ingredient presentation. This is just my personal opinion, and everyone's taste is different. While there are several miso ramen shops in Okachimachi, I expected this one to be the best based on its name. However, it was far from that. The flavor lacked depth, richness, and complexity. It was simply salty and thin. Honestly, there wasn't anything good about it. Also, the seat I was assigned was in the middle of the counter, right where the counter staff and floor staff exchanged tickets. Their hands kept brushing past my ears as they shuffled the tickets, making it very uncomfortable and distracting. That seat was truly the worst. Additionally, I found the time between the noodles being cooked and served to be quite long. The floor staff's Japanese wasn't very clear, making it difficult to understand them. They should make an effort to speak more clearly. When they mumbled quickly while looking down, I couldn't understand a word they said.

The Miso Chashu Ramen with Ajitama (marinated soft-boiled egg) was delicious. While you can add extra vegetables and garlic for free, I didn't. Apparently, rice is also free during weekdays at lunchtime. The noodles were thick and straight, offering a satisfying chew. The soup was a rich and creamy miso pork bone broth. The chashu pork was tender and came in three large slices. The ajitama was also excellent. I thoroughly enjoyed this meal.
