Located about a 6-7 minute walk from Higashi-Ginza Station, this restaurant had a line of about 10 groups when I arrived around 1 pm on a weekend. After waiting for about 40 minutes, I was finally able to enter. This time, I ordered the Clam, Bonito, and Chicken Triple SOBA for 1400 yen. The light and clear soup was full of refined umami, and the noodles, developed in collaboration with a Kyoto noodle factory, were a perfect match. The medium-thick straight noodles were fragrant and firm, offering a satisfying bite. The toppings were luxurious and colorful, featuring two clams, two types of chicken, rare roast pork, red and white knotted fish cakes, and thick fried tofu, all artfully arranged. The table-side eschalot oil allowed for a flavor change, complementing the soup beautifully. I enjoyed the entire meal thoroughly.

Nestled in the heart of Ginza, "Mugito Olive Ginza Honten" is a ramen shop renowned for its exquisite broths, meticulously crafted from daily changing ingredients like clams, chicken, and dried bonito. Free of artificial flavorings, the soup showcases the purest essence of its ingredients, delivering a refined and elegant taste. The perfectly paired homemade noodles enhance the experience, allowing you to fully savor the depth of the broth. The "Shin-Tori SOBA" in particular is a must-try for chicken enthusiasts, offering a rich and satisfying bowl. The restaurant features a predominantly counter seating arrangement, providing a tranquil ambiance for enjoying your ramen. Despite its Ginza location, the shop exudes a warm and welcoming atmosphere, adding to its charm. For any ramen aficionado, this is a must-visit destination.

Located behind GINZA SIX, this establishment features electronic touch panels and caters to international visitors. I recently tried their Clam SOBA. It comes with large clams, which explains the slightly higher price tag of 1,700 yen. It's not often you find ramen with such generous portions of large clams, making it quite impactful. The chicken and pork char siu are also very satisfying. The broth is light and easy to drink, complemented by the crispness of the scallions. The shallot oil on the table is subtly placed, but you should definitely use it. It transforms the flavor into a completely different soup, allowing you to enjoy it without getting bored and finish it all in one go.

The rich chicken flavor, the aroma of dried sardines, and the clam essence come together to create a deep, refined taste. The clear soup is delicate yet flavorful, with different layers of umami unfolding with each sip. The thin noodles are firm and perfectly complement the soup. The toppings, including tender chicken chashu, menma, and scallions, add a touch of elegance to the dish. The flavor is satisfying and enjoyable to the last drop. ## Crowds & Customer Base * **Service Speed:** ◯ * **Crowds:** Lines are inevitable during lunchtime, but the turnover is fast, so you can usually get in without waiting too long. * **Customer Base:** Primarily 20-40 year old office workers, couples, and ramen enthusiasts. ## Usage Scenarios (Lunch & Dinner) * **Solo:** ◎ * **Friends:** ◎ * **Date:** ◎ * **Business Meal/Entertainment:** × * **Banquet:** × This is a highly recommended spot for those seeking refined ramen. This time, I'd like to introduce "Mugito Olive Ginza Honten" in Higashi-Ginza, Tokyo! ✨ Tabelog Score: ☆★☆★☆3.77☆★☆★☆ This is a famous restaurant that has been selected as one of the Top 100 Ramen Shops on Tabelog for 7 consecutive years 😊 I had visited once before, around 2022, but this was my first time trying it after their menu was revamped. Previously, I went for lunch on a weekday, arriving around 11:30 am, and there was a 5-person wait. This time, I arrived around 7:30 pm and there was a 5-person wait (lol). It seems like it's always crowded no matter when you go(^^;; However, with 15 counter seats, the turnover is fast ✨ This time, I waited outside for about 5 to 10 minutes! Previously, I had the Clam, Dried Bonito, and Chicken Triple SOBA, but this time I tried the revamped Clam, Dried Bonito, and Chicken Triple SOBA^^ ◆◇◆Mugito Olive Ginza Honten◆◇◆ Clam, Dried Bonito, and Chicken Triple SOBA🍜 / Price: ¥1400 Ajitama (Soft-boiled Egg)🥚 / Price: ¥150 ※They are now cashless, so please be aware that they do not accept cash. ◆Address: 1F Ginza Stella Building, 6-12-12 Ginza, Chuo-ku, Tokyo ◆Access: 5 minutes walk from "Higashi-Ginza" Station (A1 Exit) on the Tokyo Metro Toei Asakusa Line ・6 minutes walk from "Ginza" Station (A5 Exit) on the Tokyo Metro Marunouchi, Ginza, and Hibiya Lines ・10 minutes walk from "Ginza-itchome" Station (Exit 9) on the Tokyo Metro Yurakucho Line ・12 minutes walk from "Shimbashi" Station (Shiodome Exit) on the JR Line ◆Business Hours: 【Mon, Tue, Thu, Fri, Sat, Sun】11:00 - 15:30, 17:30 - 21:30 ◆Closed Days: Business hours and closed days may change, so please check with the store before visiting. This soup is SO delicious!!!!! There was an explanation on the counter like this^^ "We combined a rich chicken and bonito broth with various fish stocks. By switching from dried bonito to dried bonito flakes, we have created a refined and delicate, fragrant soup. This is an adult Triple SOBA." It's definitely light yet refined, with a very deep flavor^^ It's more like French cuisine🇫🇷 than ramen🍜 The noodles are straight noodles specially developed in collaboration with Menya Teioku in Kyoto, and they go perfectly with the soup^^ The chicken breast and pork belly, seafood char siu🥩, and clams🦪 are all exquisite! I'm truly impressed by the taste of a restaurant that has been selected as one of the Top 100 for 7 consecutive years^^ It was truly a delicious and exquisite dish! Thank you for the meal😋
