This time, I'd like to introduce "Homemade Noodles Ito Ginza Store" located in Ginza, Tokyo! ♪ Tabelog Score: ☆★☆★☆3.71☆★☆★☆ The main store is in Akabane💡 The flavors here are mainly divided into two choices. ① The ultimate niboshi (dried sardine) soup, straight up niboshi. ② A double soup blending Hinai-jidori chicken and niboshi. Ordering at this store is a bit unique. ① If you choose the regular Chuka-soba (Chinese-style noodle soup), it only comes with green onions as a topping, so I recommend choosing the Niku-soba (meat noodle soup) with four slices of chashu (roasted pork)💡 ② The Chuka-soba has a small serving size of one portion (140g), so it's best to order a medium size of 1.5 portions (210g) for an additional ¥100 or a large size of two portions (280g) for an additional ¥200✨ ③ However, the soup amount doesn't increase with the noodle amount, so it's better to also order a soup topping. I had lunch at "Homemade Noodles Ito, Ginza Branch," located in Ginza's Sixth District. I remember visiting the Akabane branch a few years ago! It's still a popular spot. Upon entering, I purchased a ticket from the vending machine. I ordered the "Meat Soba (Medium) 1100 yen" and "Small Rice 100 yen." The noodle portions are as follows: Small (1 serving) 140g, Medium (1.5 servings) 210g, Large (2 servings) 280g. The most standard option is the "Chuka Soba (Small) 750 yen." The restaurant is compact, with seating for a maximum of 12 people. I sat at a table and waited for my meal. When the Meat Soba arrived, I took a sip of the soup first. The strong, impactful, and delicious niboshi (dried sardine) broth was fantastic. The noodles were firm, and I was hooked. The niboshi flavor was a satisfying treat for my stomach. I then enjoyed the rice while sipping the soup. It was the perfect combination of ramen and rice.
A renowned restaurant with its main branch in Akita. It has been featured in the Michelin Guide Tokyo 2015 and 2016 Bib Gourmand. The soup is made with an abundance of the highest quality dried sardines from Kujukuri, carefully removing any impurities and bitterness to extract only the essence of flavor. While dried sardines are known to be high in purines, the deliciousness of the soup is undeniable. The soup portion is truly small. The noodles maintain their characteristic crisp texture. It's been about six years since I last had their ramen at their Oji branch, and I was amazed by its deliciousness back then. I ordered the 'Niku Soba' (meat ramen). It was a delicious meal. I finished every drop of the soup!

I visited Homemade Noodles Ito Ginza for the first time on Saturday, May 7th, 2024 at 9:55 PM. Location: Tokyo Ginza Building B1F, 6-12-2 Ginza, Chuo-ku, Tokyo I ordered (including tax): - Chuka Soba (medium) ¥850 The only ingredients were noodles and green onions. I must have ordered wrong (lol). I might have been a bit tipsy after having 5 drinks at a bar... It was simple, but the soup was delicious and the noodles were firm, making for a very tasty meal. Next time, I'll try the Niku Soba with char siu. Definitely recommend checking it out if you have the chance!
