Perhaps it's more accurate to say that we pair Japanese cuisine with wine, rather than the other way around. The Japanese food here is simple and rustic, but you can enjoy the marriage of wine with seasonal and high-quality ingredients. All the wines were new to me, but it was a lot of fun to discover something new. If you're looking for a chance to let go of your own preferences and just go with the flow, I highly recommend joining Odajima-san on this journey. :)
A pioneer in Japanese cuisine and wine pairing. The umami and saltiness of the dashi broth, the acidity and sweetness of Japanese citrus fruits, were all perfectly balanced with the wines.

It's truly rare to find a restaurant that focuses on the marriage of food and drink, serving each dish with a perfectly paired beverage. This place is truly unique in that regard. Of course, the food is delicious, and it's a wonderful discovery to see how well wine complements Japanese cuisine!
