The open and airy atmosphere is lovely, and on sunny days, the light pours in through the windows, making it even more beautiful. The dishes were simple yet incredibly refined, and everything was absolutely delicious. The following were particularly memorable: โ๏ธ A combination of 23-month-aged cured ham and coca, a Spanish-style bread infused with dried figs. The sweetness of the figs, the saltiness of the cured ham, and the crumbly, crunchy texture of the bread came together in a perfect harmony. The hand-cut cured ham was so delicious... โ๏ธ A beautiful dish featuring a creamy cheese mousse made with soft, creamy Tierno cheese, topped with cucumber, baby squid, tomato jelly, zucchini marinated in honey and lemon, pine nuts, and dill. It was a refreshing and perfect dish for early summer. The rich and creamy cheese mousse added a touch of depth to the dish. The delicate layering of flavors and textures was perfectly balanced. โ๏ธ The Spanish omelette changed my perception of this dish! The omelette, which I had always thought of as dry, was incredibly fluffy and soft. It was topped with a generous amount of sakura shrimp aioli, which was so good I could have easily finished a whole bottle of sake with it. It was also delicious with the accompanying baguette. This was truly amazing. โ๏ธ The Iwachu pork was served with a spicy sauce made with cumin, coriander, oregano, and other spices. The meat was juicy and tender. The accompanying Kitaakari potatoes were perfectly crispy and fluffy. โ๏ธ The final dish was squid ink paella! It was cooked in a large pot and served for everyone to enjoy. The rice was cooked to perfection, and the seafood flavors were concentrated. The plump shrimp, chewy squid, and garlic-infused aioli were all delicious. I was full but pleasantly so, and I loved the balanced feel of the meal. I was truly inspired by this style of Spanish cuisine. It's hard to get a reservation, but I definitely want to go back again.
