Was it 7 years ago when I last visited? Even then, there was a line, and I remember waiting about 30 minutes before opening. This time, I visited around 1:30 pm. To my surprise, there was no one in front of the store, and when I peeked inside, there were empty seats! What a lucky break! I was able to get in without waiting. The char siu was sold out, but I ordered a soft-boiled egg. I guess they don't have a system for large portions, just like before. The ramen looked absolutely delicious. And the taste, the texture of the noodles, everything was exactly what I love in ramen. It's no wonder it's the most popular ramen shop in Shibuya. It was absolutely delicious. It's definitely in my top 3 favorite ramen, a true favorite.
When it comes to ramen in the Shibuya Station area, "Hayashi" is the go-to spot. I absolutely love their rich, yet not overly salty, broth. The soft-boiled egg is also a perfect complement, enhancing the richness of the soup without adding any unnecessary flavors. Most of the customers are regulars, so it's common knowledge that you buy your ticket when you reach the counter, wait for someone to finish their meal and leave, and then take their seat once the staff has cleaned the table. This ensures a smooth flow in the narrow space. As a regular customer, I strive to optimize the experience so that more people can enjoy this delicious ramen within the limited hours of their lunch service.
I had the Ajitama Ramen for ¥1100! Luckily, I was able to get in without waiting. The soup was simple but rich, a consistently delicious flavor. A notice said they'll be closed for the entire month of August for summer break. It's pretty bold to take such a long break, but I think it's awesome!
A popular ramen shop in Shibuya. It's only open during the day, so I hadn't had a chance to visit until now. I finally went for the first time. I arrived around 2:00 PM. Maybe it was a good time to go, because there were only about four people in line, so I was able to get in within 15 minutes. I ordered the ramen with an egg. The ramen came out pretty quickly. The soup is characterized by its rich, flavorful broth with a distinct umami taste from the seafood. The noodles have a good bite and go perfectly with the soup. However, other reviews mentioned a yuzu flavor, but there was no yuzu on top, which was a bit disappointing. Still, it was definitely delicious.
I've always seen a long line at [Project-R] and never been able to get in, but today it was relatively empty (still a 10-person wait), so I decided to join the queue. I ordered the Ajitama Ramen for ¥1,100. The basic ramen with an added soft-boiled egg, extra char siu, and other toppings are the only variations, so the turnover is efficient and fast. I was seated quickly and the ramen arrived in just 2-3 minutes. The soup had a subtle seafood aroma and was delicious, but the bowl was deep and difficult to drink from with a spoon. Overall, it was decent, but I think I'll only visit once. There are many ramen shops in Shibuya, but it's hard to find one that stands out.
