A delightful shortcake featuring a delicate sponge cake and juicy, seasonal pears! Located just a 2-minute walk from Ginza Station, "Shizuka Confectionery Shop, Natural Confectionery Research Institute, Ginza 5-chome Store" is a bakery that could easily become a top-rated sweets destination. Known for its biscuits, madeleines, and other baked goods, it often draws long lines. I arrived around 2:30 PM on a weekday and found no wait, allowing me to walk right in. I've always been intimidated by the lines, but it seems weekdays at this time are less crowded. I initially planned to buy biscuits and madeleines, but I couldn't resist the last remaining shortcake (pear) for ¥756. This autumnal treat features a gentle sponge cake made with free-range eggs and brown sugar, layered with fresh, seasonal Japanese pears. The sponge is incredibly light and airy, the cream is smooth, and the thinly sliced pears create a beautiful mille-feuille effect. It's absolutely delicious. I devoured it in a flash.

Since going all the way to the main store in Minato-ku would take time, I was grateful that they had a branch in the Ginza area, making it convenient for tourists. The clean and minimalist interior screams the store's concept, making it a conscious-high-class confectionery shop. While their cookie tins are famous, they also sell individual cookies. They are large and satisfying to eat because of their texture, but to be honest, the simple flavor might get boring. While the cookie tins are visually appealing with a variety of flavors packed in, I found that buying different flavors individually was more suitable for me. It's a 3-minute walk from the nearest exit of Ginza Station on various lines. Their cookies are a delight, with the flavors of the ingredients becoming more pronounced with each bite. The standard box, priced just under 6,000 yen, contains over 30 cookies. Once you experience this deliciousness, the price seems reasonable. Their fresh cakes are also exceptional.

The sablés and cakes are both simple and honest, with a restrained sweetness and deliciousness. The cakes felt a bit large compared to recent prices. The chocolate sandwich was bitter and delicious.
