This is what Edomae sushi is all about. While many new sushi restaurants have popped up recently, this one has been serving this style for over 10 years. There are no truffles or caviar, no Instagram-worthy dishes. The chef meticulously sources the highest quality ingredients, traveling all over Japan to find them. Just listening to him talk about the ingredients is enough to make you hungry. And then there's the vinegar rice, a traditional recipe passed down from the chef's own master. This vinegar rice is a perfect match for the tuna. And the tuna... it was simply incredible. I haven't had tuna this good in a long time. They also serve seasonal uni and other delicacies, so you can enjoy the best of what's in season. I usually don't see scallops served at high-end sushi restaurants, but theirs was delicious. I want to come here four times a year to experience the changing seasons. The chef and his wife run the restaurant, serving only one group of customers at a time. The atmosphere is lovely. It's refreshing to find a sushi restaurant with this kind of intimate setting, as they're becoming increasingly rare. The uni and Nara-zuke (pickled daikon radish) was a first for me, but it was absolutely amazing. I couldn't believe how delicious the Nara-zuke was. And then, to finish, they serve a miso soup made with all the fish used that day. I don't know if it's the chef's skillful broth-making or the incredible quality of the fish, but it was simply divine. This is definitely a place I'll be returning to again and again. Thank you for the delicious meal.

My favorite sushi restaurant in Ginza! 🍣 The ingredients are top-notch, and the portions are satisfying. 😊 The chef and his wife are both so friendly and welcoming, making it a truly comfortable place to be. 😌

The chef's dedication to using high-quality ingredients is truly remarkable, and both the appetizers and nigiri were incredibly delicious. However, while it's a luxury problem, the portions were quite large, leaving me feeling very full by the end, which slightly diminished my overall satisfaction.

A return visit. A high-end establishment where the quality of the ingredients shines. While the selection of sake may seem modest, the content is quite substantial. There are even some rare varieties that are hard to find. Every piece of sushi is exceptional. Overall, this is a restaurant that truly embodies the essence of sushi. It's not for everyone, and I would recommend it to those with a high level of experience in sushi.
