This is a quiet establishment where the owner handpicks their clientele. Thanks to this, you can enjoy a peaceful meal. The owner doesn't try to please or flatter first-time customers. If you prefer a lively atmosphere, there are other places to go. Some people appreciate dimly lit, old buildings. When in Rome, do as the Romans do.

A sushi restaurant in Asakusa, Tokyo. **'Kiban Sushi'** Revisited. This time, I came here for lunch with a friend from Okinawa. We ordered two sets of recommended sushi and a bottle of beer to start. Beer in the afternoon is always delicious. We added grilled fish as a side dish and ordered some sake. We had a wonderful time. Thank you for the meal. ------------------------------------- The lighting inside the restaurant is dim, and from the outside, it looks like it's closed. When you go inside, there's a simple menu. I love bottled beer, so I ordered a medium bottle of Ebisu. I ordered the recommended sushi. It was a fun time catching up with an old friend. The sushi came out at just the right time, which was great. Everything was delicious. Thank you for the meal. I'll definitely come back again.

I made a reservation in advance through Hot Pepper and went in. There was no curtain hanging outside, and the inside was dark, which made me a little uneasy. However, the service, the timing of the sushi, and the taste were all excellent. The slightly firm rice was also a nice touch, and the flavor of the soy sauce and the clear soup was exquisite. The size, thickness, and taste of the fish were all completely satisfying. The restroom was also Western-style and clean. However, the chef was deep in conversation with regulars, making it difficult for a novice like me to know when to order.

I haven't come across any delicious uni (sea urchin) lately at sushi restaurants or seafood places. It's ironic that uni is the most expensive sushi topping. At Kibun Sushi, the uni and all the other toppings are consistently delicious, no matter when you eat them. It makes me appreciate what it means to be a true sushi chef. There was a time when I envied those ¥50,000-per-person sushi restaurants, but after eating at Kibun Sushi, I lost all desire to go. In my opinion, it's the best sushi restaurant in Japan. People have said things about the service, but the owner, Sekiya-san, is not arrogant or boastful. He's actually quite a nice guy. Sekiya-san is a soccer fan, so if you want to chat with him, I recommend talking about soccer. Don't be afraid of him; he's not scary at all.

## A Venerable Edomae Sushi Establishment ## I visited #Kibun Sushi in Asakusa, a long-established town sushi restaurant. I saw it on YouTube and felt compelled to come. I made a reservation for the 5 PM opening time. It was Monday, and I was the only customer at first. Then, a few more people trickled in. By the time I left, a little before 6 PM, there were four people, including two foreigners. I heard that the restaurant usually gets busier around 6:30 PM. I ordered the #Recommended Sushi set for ¥7,700, which included 11 pieces. The rice was quite firm, almost like eating rice koji for sake. It was lightly seasoned, allowing the flavors of the ingredients to shine through. I prefer firmer rice, but I would have liked it a bit softer. There were two pieces of tuna, one lean and one between lean and medium fatty. The simmered clams and squid rice were spectacular. The sauce was unique and delicious. I usually only eat conveyor belt sushi or pre-packaged sushi, and I've only had high-end sushi a handful of times in Nagoya, all under ¥20,000. So, I may not be an expert, but this sushi was simply delicious.
